Drawing on a thoughtful, low-intervention approach in the vineyard and cellar, it captures the character of its Burgundy terroir with clarity and precision.

Tasting Notes
In the glass, Bourgogne Foultieres 2022 shows a bright, translucent ruby hue with a delicate, youthful rim—classic for fine Pinot Noir. The nose opens with fresh red cherries, wild strawberries, and crushed raspberries, followed by subtle notes of rose petal, dried herbs, and a hint of spice and forest floor that add complexity without ever feeling heavy. On the palate, the wine is finely textured and elegant, with juicy red fruit at the core—think cherry, cranberry, and red currant—woven together with lively acidity and silky, well-integrated tannins. There’s a gentle savoury undertone and a touch of minerality that carry through to a long, graceful finish. While already very charming and accessible now, this 2022 has the structure and freshness to develop additional nuance over the next 5–7 years, gaining more earthy, spicy complexity with time in bottle.

The Bourgogne Foultieres 2022 is sourced from carefully tended Pinot Noir parcels in Burgundy, where limestone-rich soils and a cool continental climate provide ideal conditions for producing refined, aromatic wines. Vineyard work typically emphasizes healthy, balanced vines—often with a strong focus on manual work to limit yields and enhance concentration. Grapes are hand-harvested at optimal ripeness to preserve freshness and purity of fruit, then sorted to ensure only the best berries make it into the cellar. Fermentation takes place in small vats, with a gentle extraction to safeguard Pinot Noir’s delicate aromatics and silky tannins. Aging is usually carried out in a combination of older oak barrels and/or neutral vessels, allowing the terroir character and varietal typicity to shine without overpowering oak influence.

Food & Serving
This Bourgogne Pinot Noir is a versatile partner at the table. It pairs beautifully with roast chicken, duck breast, pork tenderloin, veal, and dishes featuring mushrooms or truffle accents. It also complements lighter game birds, charcuterie, and semi-soft cheeses such as Comté, Tomme, or mild goat cheeses. Serve at around 14–16°C to highlight its freshness and aromatic detail. A short decant of 20–30 minutes can help the wine open up, especially in its youth, but simply allowing it to breathe in the glass will also reveal its layers over the course of a meal.
