Feudi San Gregorio Dubl Esse Dosaggio Zero Millesimato 2015 is a refined, méthode traditionnelle sparkling wine that showcases Greco at its most pure and expressive. Crafted only from the best parcels around Tufo in Campania, it is bottled without any liqueur d’expédition (zero dosage), allowing the terroir to speak with absolute clarity. This limited-edition cuvée is the culmination of a visionary project begun over a decade ago, created to reveal the true sparkling potential of Irpinia’s volcanic hills.
Tasting Notes
In the glass, Dubl Esse 2015 shows a luminous straw-gold color with fine, persistent bubbles forming a delicate, creamy mousse. The nose is poised and complex, offering layers of citrus zest, crisp green apple, pear skin and white peach, intertwined with notes of wild herbs, chamomile, flint, toasted brioche and a subtle saline edge.
On the palate, the wine is bone-dry, focused and vertical, with a taut acidity that is beautifully integrated into a rich, textural mid-palate. Flavors of lemon curd, grapefruit pith and crunchy orchard fruits mingle with hints of almond, pastry, smoke and wet stone. The finish is long, savory and mouthwatering, highlighting the striking mineral backbone typical of Tufo. Thanks to its structure and concentration, this 2015 vintage has excellent aging potential; it will continue to gain nuance and complexity over the next 5–8 years, developing more honeyed, nutty and tertiary notes while retaining its vibrant core.
Production
The Greco grapes used for Dubl Esse come from high-altitude vineyards in the Tufo area of Irpinia, in Campania, where volcanic and sulfur-rich soils give the wines their distinctive mineral character. Vines grow on steep, well-drained slopes that benefit from significant diurnal temperature shifts, preserving acidity and aromatic precision. The fruit is hand-harvested at optimal ripeness to ensure pristine quality and careful selection in the vineyard. After a gentle pressing, the base wine is fermented in stainless steel to capture freshness and purity of fruit. A second fermentation takes place in bottle following the traditional method, with extended lees aging to build texture and complexity. At disgorgement, no dosage is added, resulting in a Dosaggio Zero style that captures a pure, unadorned expression of Greco and its terroir.
Food & Serving
This is a superb food wine that shines with refined yet characterful dishes. Try it with crudo, oysters, scallops, or other shellfish, as well as delicate white fish, sushi and sashimi, or tempura. Its structure and minerality also make it a natural partner for buffalo mozzarella, fresh goat cheese, vegetable tempura, artichokes, and lightly spiced Mediterranean cuisine. Serve well-chilled at around 8–10°C to highlight its precision and aromatic detail. A brief decant in a chilled carafe, or simply opening the bottle 10–15 minutes before serving, can help the wine open up, especially as it gains a few years of bottle age.
