Tasting Notes
In the glass, it shows a bright, luminous golden colour with a very fine, persistent mousse. The bouquet is layered and complex, with notes of ripe citrus, white flowers, baked apple, toasted brioche, hazelnut, and subtle mineral nuances. On the palate it is creamy yet precise, with fresh acidity, impressive depth, and a long, savoury finish. The extra brut style keeps everything taut and elegant, while the magnum format supports even slower, more graceful evolution over time. This is a sparkling wine with excellent ageing potential, capable of developing greater complexity for many years.

Production
Produced in Trentino-Alto Adige from 100% Chardonnay, this wine reflects the cool alpine conditions and high-altitude vineyards that give Ferrari’s wines their tension and finesse. The grapes are typically harvested by hand to preserve purity and freshness, then vinified using traditional sparkling-wine methods with extended lees ageing to build texture, complexity, and depth. The result is a reserve wine shaped by careful selection, patience, and a strong sense of place.

Food & Serving
Best served well chilled at around 8–10°C. It is an excellent match for fine seafood, oysters, scallops, sashimi, caviar, poultry with delicate sauces, and rich risottos, as well as aged hard cheeses. A short decant is not recommended; instead, allow a few minutes in the glass for the wine to open naturally, especially in magnum format.
