Production
Saffredi is sourced from Fattoria Le Pupille’s estate vineyards in the Maremma area of southern Tuscany, not far from the Tyrrhenian Sea. Here, warm days, cooling coastal breezes, and well-drained soils of sand, clay, and limestone create ideal conditions for Bordeaux varieties, giving both ripeness and aromatic precision. Grapes are typically harvested by hand in small crates, with strict selection in the vineyard and at the sorting table to ensure only perfectly ripe bunches make it into the final blend. After gentle destemming and fermentation in temperature-controlled tanks, the wine undergoes a long maceration to extract color, flavor, and tannin. It is then aged in small French oak barrels (a significant portion new) for an extended period, allowing the varieties to harmonize and develop complexity before final blending and bottling, with the large-format 15L offering an especially slow, graceful evolution.

Food & Serving
This powerful yet polished Tuscan blend is at its best alongside richly flavored dishes: think dry-aged bistecca alla fiorentina, roast lamb with rosemary and garlic, braised short ribs, venison, or deeply flavored stews. It also pairs beautifully with mature hard cheeses like Parmigiano Reggiano or aged Pecorino Toscano, and with dishes featuring mushrooms, truffles, or roasted root vegetables. Serve at 16–18°C (60–64°F) to highlight both fruit and freshness. Given its youth and concentration—especially in a Nebuchadnezzar—extended aeration is recommended: if you plan to pour from the large format, decant the wine for at least 2–3 hours beforehand (or more for maximum expressiveness), and if serving from a smaller decanter or in stages, swirl generously in large Bordeaux glasses to let the bouquet fully open.
