Tasting Notes
In the glass, Saffredi 2018 is deep, concentrated ruby with a youthful, almost inky core that hints at its intensity and long life ahead. The nose opens with polished aromas of black cherry, ripe plum and dark berries, layered with notes of graphite, dried tobacco, cedar, spice box and a subtle smokiness reminiscent of embers from a fireplace.
On the palate, this is a full-bodied yet impeccably balanced wine. Ripe black fruits and juicy dark plums are wrapped in fine-grained, carefully measured tannins, supported by a fresh, vibrant acidity that keeps the wine lifted and precise. Hints of cocoa, espresso, sweet herbs and warm spices unfold with air, leading to a long, savory and harmonious finish. In this 2018 vintage, Saffredi shows immediate elegance but is clearly structured for longevity. Especially in double magnum, it has excellent aging potential, easily developing over 15–25 years, gaining further complexity, silkier texture and tertiary notes of leather, truffle and forest floor.
Production
Saffredi is crafted from hillside vineyards in the Tuscan Maremma, where the Mediterranean climate, cooling sea breezes and well-drained, mixed soils of clay, sand and limestone give the grapes both richness and aromatic lift. The grapes—primarily Cabernet Sauvignon with Merlot and a smaller portion of Petit Verdot—are carefully hand-harvested at optimal ripeness to preserve freshness as well as depth. In the cellar, each variety is vinified separately, with temperature-controlled fermentation and gentle extraction to achieve concentrated color and flavor without harshness. The young wines are then aged in French oak barriques, a significant portion new, allowing Saffredi to gain structure, polish and complexity before blending and extended bottle aging, particularly important for the 3 L format.
Food & Serving
This is a commanding, gastronomic red that shines with richly flavored dishes: think bistecca alla fiorentina, grilled ribeye, slow-braised lamb shank, wild boar ragù, game birds, or aged hard cheeses such as Parmigiano Reggiano and Pecorino Toscano. It also pairs beautifully with truffle dishes and mushroom-based sauces, which echo its earthy undertones. Serve at 16–18°C (60–64°F) to highlight both fruit and finesse. In this 3 L double magnum, decanting for 2–3 hours is recommended in its youth to fully open the bouquet and soften the structure; older bottles will need slightly less time, just enough to let the wine stretch and reveal its layered complexity.

Fattoria Le Pupille, located in the Maremma area of southern Tuscany, is one of the region’s pioneering and most respected estates. Under the vision of owner Elisabetta Geppetti, the winery helped put Maremma on the fine wine map, demonstrating that the coastal hills of southern Tuscany could produce reds of world-class stature.
