Harvesting is carried out by hand, allowing for strict selection of bunches both in the vineyard and at the winery. After destemming and gentle crushing, the must undergoes a temperature‑controlled fermentation in stainless steel, with a relatively long maceration to extract colour, aroma and fine tannins. The wine is then aged for an extended period—around two years—in French oak barriques, with a proportion of new barrels and medium toast, before further bottle maturation to integrate its structure and polish the tannins.
