Enrico Serafino Alta Langa Riserva Pas Dosé Sboccatura Tardiva 2019 is a refined expression of Piemonte’s classic-method tradition, crafted without dosage for a pure, uncompromising style. Made from 85% Pinot Noir and 15% Chardonnay and aged extensively before late disgorgement, it captures both precision and depth in a wine of exceptional balance.

Tasting Notes
Pale straw in the glass with a fine, persistent mousse, this wine shows a very elegant and luminous profile. The nose is delicate yet layered, with notes of white flowers, citrus peel, green apple, brioche, and subtle almond, all lifted by a distinctly mineral edge. On the palate, it is crisp, linear, and dry, with refreshing acidity and a clean, chalky finish that underscores its pas dosé character. The extended lees aging brings texture and complexity, while the wine’s tension and structure suggest excellent development potential over the coming years.

Production
Produced in Piemonte’s Alta Langa zone, where the cooler hillside vineyards provide ideal conditions for sparkling wine, this cuvée is built on Pinot Noir for structure and Chardonnay for finesse. The grapes are selected to preserve freshness and aromatic precision, then vinified according to the traditional method and aged on the lees for around 60 months before late disgorgement, with no expedition liqueur added.

Food & Serving
This is an excellent match for oysters, shellfish, sashimi, tartare, and refined seafood dishes, as well as lightly creamy risottos or delicate white meats. Serve well chilled at 8–10°C; decanting is not necessary, though a short rest in the glass can help the wine open beautifully.
