Production
The grapes for Elio Ottin Syrah Non Expedit come from steep, terraced vineyards in the Aosta Valley, where cool alpine air, significant diurnal temperature swings and granite-based soils shape a distinctly fresh, mineral style. Harvest is carried out by hand to ensure careful selection of perfectly ripe bunches from these demanding mountain parcels. In the cellar, around 25% of the fruit is fermented as whole berries with a semi-carbonic maceration, preserving aromatic lift and juicy fruit. Fermentation is spontaneous with native yeasts, reflecting a low-intervention philosophy, and the wine then matures for one year in large 20-hectolitre French oak casks, which gently refine texture and complexity without overwhelming the purity of fruit or the sense of place.

This alpine Syrah is a versatile partner at the table, pairing beautifully with roasted lamb, herb-crusted pork, game birds, grilled sausages, and slow-braised beef or veal. Its freshness and spice also complement wild mushroom dishes, hearty pastas with ragù, aged Alpine cheeses and charcuterie. For optimal enjoyment, serve at 16–18°C (about 60–64°F). A short decant of 30–45 minutes helps the aromas fully unfurl and softens the tannins, especially in its first few years after release.
