Tasting Notes
In the glass, the 2021 vintage presents a luminous, translucent ruby hue, typical of cool-climate Pinot Noir, with delicate garnet reflections at the rim. Swirl the wine and you’ll notice a fine, elegant viscosity rather than heavy legs, hinting at freshness over sheer power.
The nose opens with vibrant red alpine berries—wild strawberry, redcurrant and raspberry—layered with notes of dried rose petals, violet and a gentle hint of underbrush. With air, more savory and mineral tones emerge: crushed rock, subtle spice, a touch of white pepper and a whisper of fine herbal notes reminiscent of mountain thyme.
On the palate, this Pinot Noir is all about balance and precision. It is medium-bodied with lively, mouthwatering acidity that carries flavors of red cherry, cranberry and raspberry sorbet. The tannins are ultra-fine, silky and well-integrated, giving the wine a graceful structure without any heaviness. A cool stony minerality and a faint hint of smoked tea or delicate oak (if used) add depth to the long, linear finish. Production
Ottin Vini farms steep, terraced vineyards in the Vallée d’Aoste, where dramatic day–night temperature swings and thin, stony soils at altitude give naturally low yields and intensely characterful fruit. The Pinot Noir vines draw from a combination of sandy, glacial and moraine soils that promote excellent drainage and emphasize finesse and minerality over richness. Grapes are typically harvested by hand to ensure precise selection on these challenging slopes, where mechanization is limited. In the cellar, Elio Ottin works with a gentle touch: careful destemming, controlled fermentations and sensitive extraction to protect the variety’s delicate aromatics. The wine is bottled unfiltered, a deliberate choice that preserves the full spectrum of flavor compounds and textural nuances, allowing the Pinot Noir to express its terroir in the most authentic and complete way.
Food & Serving
This elegant mountain Pinot Noir is a versatile partner at the table, particularly with refined, subtly flavored dishes. It pairs beautifully with roast poultry (especially duck or guinea fowl), veal scaloppine, rabbit, or pork tenderloin with herbs, as well as mushroom risotto, truffle pasta and semi-hard alpine cheeses like Fontina or Tomme. Its freshness and fine tannins also make it a superb match for charcuterie and lighter game birds. Serve at around 14–16°C (57–61°F) to highlight its aromatic detail and precision—cooler than a robust red but not chilled. A brief decant of 30–45 minutes can help the wine open up, especially in its youth, revealing additional floral and mineral layers.
