The alpine terroir, influenced by nearby glaciers and mountain winds, helps preserve acidity and aromatic precision. Harvest is typically carried out by hand, parcel by parcel, to ensure only perfectly ripe, healthy bunches are selected. In the cellar, Ottin favours a gentle, minimalist approach: careful pressing, cool fermentations in stainless steel and an extended maturation of over seven months on fine lees in tank. This regimen allows the variety’s naturally expressive aromatics and mineral core to shine without the influence of oak, while the time on lees builds texture and a subtle creaminess.
