Tasting Notes
In the glass, the 2021 Ginestra Casa Matè shows a luminous, garnet core with brilliant ruby highlights typical of youthful Barolo. The nose is enveloping and complex, with balsamic overtones leading the way, followed by layers of blue and purple fruits, crushed violets and lavender, sweet and savory spice, and a vivid note of blood orange that adds lift and precision.
On the palate, the wine is at once silky and firmly structured, with finely etched tannins that frame the fruit without overwhelming it. Flavors of dark cherry, wild berries, plum skin and violet interweave with licorice, cedar, and a subtle earthiness, while the citrus-zest nuance suggested by the blood orange note brings real energy to the finish. The 2021 vintage here is refined rather than massive, emphasizing clarity, length, and aromatic complexity. In magnum, this Barolo will easily develop over 15–25 years, gaining more truffle, tobacco, and forest-floor nuances with time, yet it can already be enjoyed with a generous decant.
Production
From the Ginestra Casa Matè vineyard in Monforte d’Alba, this Barolo benefits from a classic Barolo terroir: calcareous-clay soils rich in marl, steep south to southeast exposures, and significant diurnal temperature swings that preserve acidity and aromatic detail. Elio Grasso farms their estate vineyards with meticulous attention, favoring low yields and careful canopy management to achieve optimal ripeness and concentration. Grapes are hand-harvested parcel by parcel, then gently destemmed and fermented in temperature-controlled vessels, with extended maceration on the skins to extract fine tannins and Nebbiolo’s signature aromatics. The wine is then aged in large oak (traditionally Slavonian botti and/or neutral wood) for an extended period, allowing the structure to integrate and the purity of the fruit and terroir to remain at the forefront.
Food & Serving
This Barolo is a natural partner for refined, savory dishes: think braised veal shank (ossobuco), pappardelle with porcini or truffle, roasted lamb, game birds, or aged hard cheeses such as Parmigiano Reggiano or mature Pecorino. It also shines alongside mushroom risotto, rich polenta with ragù, and charred vegetables with herbs. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo glasses to allow the aromatics to unfold. For current enjoyment, decant the magnum at least 2–3 hours before serving; older bottles will require a gentler, shorter decant to preserve their more delicate tertiary notes.
