Tasting Notes
In the glass, the 2018 Eisele Vineyard Cabernet Sauvignon is a deep, opaque purple-black, clinging to the sides of the glass with slow, richly pigmented legs. The nose unfolds gradually with air, revealing layers of dark chocolate, warm blackcurrant, baked plum, and Morello cherry, intertwined with notes of red roses, violets, pencil shavings, cinnamon stick, dusty earth, and a faint hint of iron ore. Production
Eisele Vineyard lies in a sheltered valley near Calistoga in northern Napa Valley, where well-drained alluvial and cobbly, volcanic soils, tempered by cool night air from the surrounding hills, create ideal conditions for Cabernet of remarkable finesse and longevity. The vines are organically and biodynamically farmed, with meticulous attention to canopy management and yields kept low to maximize concentration and terroir expression. Grapes are hand-harvested at optimal ripeness, sorted berry by berry, and fermented in temperature-controlled vessels to preserve aromatics and structure. The wine is then aged in French oak barrels—predominantly new—for an extended period, allowing the tannins to polish and the complex flavor layers to harmonize before bottling into large formats such as this 6L Imperial.
