In the glass, the 2018 Eisele Vineyard Cabernet Sauvignon is very deep purple to almost opaque, hinting at its intensity and youth. The nose unfolds slowly with air, releasing layers of dark chocolate, warm blackcurrant, baked plum, and Morello cherry, woven with notes of red roses, violets, pencil shavings, cinnamon stick, dusty earth, and a faint iron-like minerality. Vinification typically involves gentle destemming, fermentation in small tanks with careful temperature control and pump-overs to extract fine tannins and aromatics, followed by élevage in high-quality French oak barrels (a significant portion new) for well over a year. The result is a wine that captures the vineyard’s unique mineral edge, precision, and depth while maintaining remarkable freshness.
