Tasting Notes
In the glass, the 2017 Eisele Vineyard Cabernet Sauvignon shows a deep garnet-purple hue, almost opaque at the core, hinting at its concentration and depth. The nose unfolds gradually, revealing layers of plum preserves, crème de cassis, blueberry compote and Morello cherry, interwoven with notes of stewed Darjeeling tea, forest floor, clove, tobacco leaf and a subtle graphite or pencil-shaving nuance. On the palate, this is medium to full-bodied with an almost effortless sense of power—silky, very fine-grained tannins frame a core of ripe black and blue fruit while maintaining notable freshness and lift. The wine glides rather than attacks, delivering intensity with elegance and a long, perfumed finish that echoes its floral, tea and spice notes. Production
Eisele Vineyard is famed for its gravelly, well-drained alluvial soils and a sheltered valley setting that offers warm days and cool nights—ideal for ripening Cabernet Sauvignon with both concentration and aromatic finesse. Vines are meticulously farmed with a strong emphasis on sustainability and precise canopy management to achieve optimal ripeness and balance. Harvest is carried out by hand, parcel by parcel, to pick each block at peak maturity. In the cellar, the fruit is carefully sorted before fermentation in temperature-controlled vessels, allowing for gentle extraction of color, flavor and tannin. The wine is then aged in high-quality French oak barrels, a significant portion new, where it develops additional complexity, texture and aromatic detail without overwhelming the purity of the fruit.

This Cabernet Sauvignon is an outstanding partner for refined yet flavorful dishes such as grilled or roasted lamb, dry-aged ribeye, beef tenderloin with herb crust, or venison with a red wine reduction. It also pairs beautifully with mushroom-based dishes, truffle-infused preparations and aged hard cheeses like Comté or mature cheddar. Serve at 16–18°C (60–64°F) for optimal expression. For current drinking, decanting for 1–2 hours helps the wine open and reveal its layers; with additional bottle age, a shorter decant primarily to remove any sediment will suffice.
