Tasting Notes
In the glass, this Cabernet shows a deep, dark colour that hints at its concentration. The nose is layered with blackcurrant, blackberry, violet, and a distinctly cool, mineral edge, while the palate delivers dark berry fruit, firm but polished tannins, and bright natural acidity that keeps everything focused and balanced. Rather than leaning into sweetness or overt ripeness, the wine stays taut, earthy, and precise, with a stone-driven finish that lingers impressively. It is built for the cellar and should reward patient aging over many years, gaining complexity, softness, and nuance with time.

Production
The grapes come from Dunn Vineyards’ high-altitude Howell Mountain site, where volcanic soils, cooler temperatures, and naturally low yields produce small, concentrated berries with vivid acidity and structure. Fruit is fermented in stainless steel with an extended maceration to build depth and tannin, then matured for roughly two and a half years in French oak, mostly used barrels, so the fruit remains the focus rather than the wood.

Food & Serving
This is a wine for deeply flavoured dishes such as grilled ribeye, lamb shoulder, braised short ribs, game, or aged hard cheeses. Serve at 16–18°C, and decant for several hours if drinking young to help the wine open and soften its firm structure.
