Tasting Notes
Deep, dense ruby in the glass, this Cabernet opens with a layered nose of black cherry, cassis, pencil shavings, mocha, dried herbs, and a subtle lift of menthol and graphite that speaks to its mountain origin. On the palate, it is powerful and uncompromising, with firm tannins, bright freshness, and complex flavors of dark fruit, toasted oak, and mineral depth. The finish is long and structured, suggesting excellent aging potential over many years, with the wine likely to gain even greater complexity as it evolves. This is Cabernet Sauvignon in a classic, focused style: concentrated, age-worthy, and quietly elegant beneath its intensity.

Production
The grapes come from Dunn’s own Howell Mountain vineyards, where the steep slopes and elevated site contribute to the wine’s firm structure, freshness, and distinctly mineral character. After strict grape selection, the wine is made with a restrained hand and aged for 32 months in used French oak barrels, allowing the fruit and mountain character to remain front and center rather than the oak.

Food & Serving
Best enjoyed with richly flavored dishes such as grilled ribeye, braised short ribs, venison, or lamb with herbs. Serve at around 16–18°C and consider decanting for several hours, especially if opening now, to help the wine fully unfold and soften its structure.
