Tasting Notes
In the glass, Doro Princic Collio Sauvignon 2023 shows a luminous straw-yellow colour with greenish reflections, signalling its youth and freshness. The nose opens with lifted aromas of grapefruit zest, lime and ripe lemon, followed by nuances of gooseberry, white peach and green apple. Subtle layers of sage, tomato leaf and wild herbs mingle with hints of elderflower and a gentle, chalky minerality. On the palate, the wine is crisp yet textured, with a mouthwatering line of acidity that keeps everything focused and refreshing. Flavours of citrus, passion fruit and crunchy stone fruit are supported by savoury herbal and mineral notes, giving the wine both depth and precision. The finish is long, clean and slightly saline, inviting another sip. While delicious in its youth for its vitality and aromatic lift, it can evolve gracefully for 3–5 years from the vintage, gaining additional complexity and a softer, more rounded texture.

Production
The grapes for this Sauvignon come from hillside vineyards in the Collio zone of Friuli-Venezia Giulia, where the classic ‘ponca’ soils – a mix of marl and sandstone – provide excellent drainage and impart notable minerality. The area’s cool nights and warm days help preserve acidity while achieving full aromatic ripeness. Grapes are typically harvested by hand at optimal maturity, with careful selection in the vineyard to ensure only healthy, perfectly ripe bunches are used. In the cellar, the fruit is gently pressed and the must is clarified before undergoing temperature-controlled fermentation in stainless steel, preserving the intense, varietal aromatics. The wine then rests on fine lees for a period to build texture and complexity, before being bottled to capture its freshness and purity.

Food & Serving
This Collio Sauvignon is a natural partner for seafood and fresh, aromatic cuisine. Try it with grilled prawns, seared scallops, marinated anchovies, or simply prepared white fish with lemon and herbs. It also works beautifully with goat cheese, burrata with tomatoes and basil, asparagus dishes, sushi and sashimi, and light vegetable risottos. Serve well chilled, ideally around 8–10 °C, to highlight its crispness and aromatics. Decanting is not essential, but pouring it into a larger glass and giving it a few minutes in the glass will help the wine open up and show its full aromatic range.
