This is a Riesling for those who love minerality: stony, salty and refined, yet with a generous, juicy core of fruit. From the steep red sandstone slopes of Höllenpfad, it offers a compelling balance between intensity and elegance that has made this bottling a reference point for the site.

Tasting Notes
In the glass, the wine shows a pale, shimmering straw-yellow colour with green reflections, signalling freshness and youth. The nose is cool and finely etched, marked by stony and flinty minerality, hints of wet rock and a subtle smokiness. Behind the mineral core unfolds perfectly ripe Riesling fruit – think white peach, citrus zest and crisp green apple – lifted by herbal tones of fresh rosemary and a whisper of saline, darker, earthy terroir notes. On the palate it is both lush and refined, with a dense yet flowing texture that glides effortlessly. The structure is firm and precise, carried by bright, linear acidity and a persistent salty streak that runs through the mid-palate into the long, mouth-watering finish. Juicy stone fruit and citrus are wrapped in a savoury, mineral frame, giving the wine both immediate charm and impressive depth. While already beautiful in its youth, this 2021 Höllenpfad Trocken has the concentration and spine to develop further complexity over 8–12 years in bottle, gaining more spice, honeyed nuances and tertiary mineral notes with time.

Production
Roxheimer Höllenpfad is a steep, sun-exposed vineyard in the Nahe region, distinguished by its warm, weathered red sandstone soils that impart both ripeness and a distinctive salty-spicy minerality to Riesling. Dönnhoff farms these parcels meticulously, with selective hand-harvesting to ensure only perfectly ripe, healthy grapes make it into the winery. The fruit is gently pressed and fermented with a slow, cool fermentation, typically in a mix of stainless steel and large traditional oak casks, to preserve aromatic purity while adding subtle textural depth. The wine then rests on fine lees, allowing it to knit together and gain creaminess without losing its hallmark tension and clarity.

Food & Serving
This dry, mineral-driven Riesling is a versatile partner at the table, excelling with delicately prepared dishes that echo its freshness and subtle spice. Try it with grilled or poached white fish, ceviche, sushi and sashimi, or classic pairings like trout with almonds and lemon. It also shines alongside lightly spiced Asian cuisine, herb-roasted chicken, seasonal asparagus, and goat cheese or young soft cheeses. Serve well-chilled but not ice-cold, ideally at 8–10°C, to allow the aromatics to unfurl. A brief decant of 15–20 minutes can help the wine open up in its youth, especially if served with more complex dishes.
