This is a feather-light, finely etched sweet wine that marries crystalline purity with remarkable depth and precision. Crafted from old vines on steep, stone-rich slopes, it delivers a quietly profound expression of Spätlese—more about grace and balance than sheer power.

Tasting Notes
In the glass, the 2021 Niederhäuser Hermannshöhle Spätlese is pale lemon with silvery reflections, hinting at its youth and elegant structure. The nose is strikingly pure, with flinty, smoky minerality up front, followed by layers of white peach, ripe lime, green apple skin, jasmine, and a touch of wet slate and herbs. It feels cool and focused, with that classic Nahe precision. On the palate, the wine is sweet yet incredibly light on its feet—silky, playful, and filigreed. Juicy stone fruit and citrus—think white nectarine, Meyer lemon and mandarin—are wrapped in a salty, mineral backbone that keeps everything beautifully taut and refreshing. The 8% alcohol underscores the sense of weightlessness, while racy acidity balances the sweetness with ease. This is not a showy or dramatic Spätlese; instead, it’s calm, poised and exquisitely balanced, with a very long, mouthwatering, saline finish. With its structure and concentration, it has excellent aging potential: expect it to evolve gracefully over 15–25 years, gaining notes of honey, candied citrus, and petrol-honey complexity while retaining its vibrant core.

Production
Niederhäuser Hermannshöhle is widely regarded as Dönnhoff’s grand cru jewel—a steep, terraced south to south-east facing slope above the Nahe river. The soils are a complex mix of dark slate, volcanic porphyry and limestone, giving the wines their trademark combination of power, finesse and deep minerality. The Riesling grapes are hand-harvested, often in multiple passes (selektive Lese) to capture perfectly ripe Spätlese fruit with impeccable acidity. In the cellar, Dönnhoff works with a light touch: gentle pressing, slow, cool fermentation—often with indigenous yeasts—in a mix of stainless steel and large, traditional German oak casks (Stückfass), followed by maturation on the fine lees. The goal is to preserve clarity, site expression and natural balance rather than to shape the wine with heavy winemaking interventions.

Food & Serving
This Spätlese is a superb partner for refined, aromatic cuisine. It shines with spicy Asian dishes (Thai salads, sushi with a touch of wasabi, light curries), dishes featuring shellfish or crustaceans (scallops, lobster, crab), and delicately prepared white meats such as veal or roasted poultry with citrus or herb-based sauces. It also pairs beautifully with soft bloomy-rind cheeses, fresh goat cheese, and fruit-driven desserts that are not overly sweet—think citrus tart or poached pear. Serve well-chilled at about 8–10°C (46–50°F). A short, gentle decant of 15–20 minutes, or simply letting the wine open in the glass, helps it unfurl its more subtle, flinty and floral nuances.
