Tasting Notes
Deep, dark ruby in the glass, the 2019 Dominus opens with a layered bouquet of black cherry, cassis, tobacco, warm spice, and a subtle cedar note. On the palate, it is full-bodied and tightly structured, with ripe, well-integrated tannins and a concentrated core of dark fruit balanced by earthy, savory nuances. The finish is long, refined, and persistent, marked by gentle vanilla and oak spice. This is a wine built for the long haul and should continue to develop beautifully over many years, gaining further complexity with bottle age.

Production
The fruit is hand-harvested from the best parcels at Dominus Estate, where meticulous vineyard selection and gentle handling help preserve purity and precision. The 2019 growing season brought a wet winter and spring, followed by dramatic temperature swings and a warm, extended summer that encouraged vigorous yet balanced development. Fermentation takes place in small open-top tanks, and the wine is then aged for around 18 months in French oak barrels to build structure and polish without overshadowing the fruit.

Food & Serving
This wine pairs beautifully with premium cuts of beef, lamb, venison, braised short ribs, and dishes featuring mushrooms or truffles. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to allow the aromas and structure to fully open up. The Magnum format is especially well suited to extended cellaring and refined dinners.
