Description
Dominique Cornin Mâcon-Fuissé Les Bruyères 2023 is a fresh and terroir-driven Chardonnay from the southern reaches of Burgundy, sourced from the Les Bruyères parcel in Fuissé. With its precise style, mineral edge, and naturally expressive character, it captures the purity and energy that make this part of the Mâconnais so compelling.
Tasting Notes
In the glass, it shows a bright, clear appearance that hints at its lively, focused style. The nose is lifted and clean, with citrus, green apple, and white flower aromas leading the way, while subtle mineral notes add a sense of finesse and definition.
On the palate, the wine is crisp and linear, with a vivid acidity that gives the fruit a fresh, energetic feel. A fine texture and a lingering, sapid finish round out the profile, making this a Chardonnay with good drinking now and the potential to develop nicely over the next few years.
Production
The grapes come from Les Bruyères in Fuissé, where chalky clay and marl soils help shape the wine’s fresh, mineral-driven profile. Dominique Cornin farms with biodynamic principles and takes a minimal-intervention approach in the cellar, allowing the vineyard character to come through clearly. Fermentation is carried out with native yeasts, and aging takes place in stainless steel to preserve purity, fruit expression, and tension.
Food & Serving
This wine pairs beautifully with shellfish, grilled white fish, chicken in light cream sauces, goat’s cheese, or vegetable dishes with fresh herbs. Serve chilled at around 10–12°C, and decanting is generally not necessary unless you want to give it a little extra air in the glass.
Producer
Dominique Cornin is a respected name in the Mâconnais, known for producing precise, site-expressive Burgundy wines with a strong sense of authenticity. The domaine has earned recognition for its biodynamic vineyard work and its commitment to low-intervention winemaking, making it a benchmark for thoughtful, terroir-focused Chardonnay in the region.
