Why shop with us?
Domini Veneti Appassimento Rosso Passito Marco Polo Collection is a characterful Venetian red that showcases the traditional appassimento method at its finest. Made from Corvina, Corvinone, and Rondinella, it combines concentration, elegance, and a distinctly Valpolicella identity, with the kind of depth and softness that has made passito-style wines such a signature of the region.
Tasting Notes
In the glass, it shows a ruby-red colour with more evolved hues, hinting at the richness that comes from extended ripening and drying. The nose is expressive and layered, with ripe cherry at the forefront, followed by sweet vanilla and subtle spice.
On the palate, it is harmonious, full-bodied, and velvety, with a smooth texture and a long, satisfying finish. The appassimento process gives the wine extra concentration and warmth, while the balanced structure and gentle spice suggest it will continue to drink well over the next few years.
Production
The grapes come from the Valpolicella area in Veneto, a terroir known for producing wines with freshness, finesse, and aromatic detail. Fruit is harvested by hand and then dried for around 60 days, a traditional appassimento technique that concentrates flavour, sugar, and texture before vinification. After a 10-day maceration with planned punch-downs, the wine undergoes full malolactic fermentation and is then matured in wood to add complexity and a more rounded profile.
Food & Serving
This style of red is a natural match for roasted meats, game, braised beef, and richly flavoured dishes such as mushroom risotto or aged hard cheeses. Serve it at 16-18°C to bring out its fruit, spice, and silky structure. Decanting for 30-60 minutes is recommended, especially if the wine is served relatively young, to allow its aromas and texture to open fully.
Producer
Negrar - Domini Veneti is one of the best-known names in Valpolicella, with a strong reputation for expressing the region’s traditional wine styles through careful vineyard work and respectful winemaking. As part of the cooperative culture that has long shaped this area, the producer has helped define the modern identity of Valpolicella while remaining closely tied to its heritage. Domini Veneti is particularly respected for its work with appassimento and Amarone-inspired wines, which continue to earn recognition for their quality and authenticity.
