Tasting Notes
In the glass, the 2008 Percristina shows a dark, concentrated garnet core with a brick-tinged rim, reflecting both its maturity and depth. The nose is beautifully evolved yet vibrant, offering layers of dried cherry, black cherry compote and wild strawberry, interwoven with notes of licorice, white truffle, roasted hazelnut, tar, dried rose petals and hints of leather and sweet spice.
On the palate, this is a large-scaled, energetic Barolo that remains remarkably refined. The attack is intense and focused, with ripe red and black fruits framed by savory undertones of earth, balsamic and tobacco. The hallmark here is texture: the tannins, once formidable in youth, have become fine-grained and well-integrated, lending a silky, flowing finish that lingers with persistence and poise. Acidity is still fresh and vertical, keeping the wine lifted and precise. Well-cellared bottles of the 2008 have many years ahead; it is drinking beautifully now but can continue to develop tertiary complexity for another decade or more, depending on storage.
Production
Percristina is typically sourced from a single, top-tier Nebbiolo vineyard in the Barolo zone, rooted in the classic marls and clay-limestone soils that define the Piedmontese terroir. These poor, well-drained slopes, at moderate altitude, yield naturally low quantities of intensely flavored fruit. Grapes are harvested by hand, with strict selection both in the vineyard and at the winery to ensure only perfectly ripe Nebbiolo clusters are used. Domenico Clerico is known for meticulous, quality-driven vinification: prolonged maceration to extract color, tannin and aromatics, followed by aging in oak (often a mix of barriques and larger vessels) to build structure and complexity without overwhelming the wine’s identity. Extended élevage in cellar before release allows the components to knit together, giving Percristina its trademark combination of power, polish and aromatic depth.
Food & Serving
This mature Barolo calls for equally refined and flavorful dishes. Think classic Piedmontese cuisine: braised beef or veal (brasato al Barolo), slow-cooked lamb shanks, game birds, or tagliatelle with white truffle. Mushroom risotto, roasted root vegetables, aged Parmigiano Reggiano, Grana Padano and firm alpine cheeses also make superb partners, as do dishes featuring hazelnuts and earthy herbs. Serve at 16–18°C (60–64°F) in large, Burgundy-style glasses. Decanting for 1–2 hours is recommended to fully open the aromatics and soften the remaining structure, especially if the bottle has been stored cool or has not been pre-opened.
