Domenico Clerico’s Barolo Pajana 2013 is a powerful, single-vineyard Nebbiolo from the heart of Monforte d’Alba, crafted for those who appreciate depth, structure and complexity in Barolo. Sourced from the lower portion of the revered Ginestra area, Pajana combines ripe, dark fruit with a strong mineral backbone and the polish typical of Clerico’s modern Barolo style. Released later than many of its peers, this 2013 has benefited from extra time in both wood and bottle, already showing remarkable harmony while still built for the long haul.
Tasting Notes
In the glass, the 2013 Barolo Pajana is deep ruby with garnet reflections beginning to appear at the rim, signalling both its Nebbiolo heritage and its progression into early maturity. The nose is layered and refined, revealing flinty minerality and subtle smoke over dark cherry, black plum and blackberry. Notes of violet, dried rose petal, licorice, anise and sweet baking spice mingle with hints of tobacco, cocoa and underbrush as the wine opens in the glass.
On the palate, this is a full-bodied, concentrated Barolo with a dense, almost velvety texture wrapped around firm, finely grained tannins. Dark fruit flavours—black cherry, macerated raspberry and ripe blackcurrant—are intertwined with graphite, tar, black tea, leather and a savoury, earthy undertone. The oak is beautifully integrated, adding gentle spice, vanilla pod and a touch of toast without dominating the fruit. The finish is long, mineral and persistent, with a mouthwatering acidity that keeps everything in balance. With its structure and intensity, the 2013 Pajana has excellent aging potential, comfortably evolving for 15–20+ years from vintage in a good cellar, gaining more truffle, leather and dried-floral complexity over time.
Production
Pajana sits on the lower section of the prized Ginestra cru in Monforte d’Alba, within Piedmont’s Barolo zone, where slightly looser soils and marginally warmer temperatures produce wines of generous fruit and ample structure. Nebbiolo grapes are hand-harvested at optimal ripeness, with strict selection in the vineyard and at the cellar to ensure only the best bunches are used. For the 2013 Barolo Pajana, fermentation involved an extended skin maceration of about 20 days to extract colour, tannin and aroma, followed by malolactic fermentation carried out in oak rather than the usual stainless steel—an approach chosen when the secondary fermentation progresses more slowly, still under carefully controlled, low-oxygen conditions. The wine then matured for 16 months in barriques and a further 16 months in large botte grande, marrying modern barrique influence with the traditional benefits of large cask aging for greater complexity and balance.
Food & Serving
This Barolo’s depth and structure make it a superb match for rich, savoury dishes. Think braised beef short ribs, ossobuco, slow-cooked lamb shank, game birds, and hearty stews, or classic Piedmontese pairings such as tajarin with ragù, agnolotti del plin, and dishes featuring truffle or wild mushrooms. Aged cheeses like Parmigiano Reggiano, mature Comté or well-aged pecorino also work beautifully. Serve at 16–18°C, ideally in large Burgundy or Nebbiolo glasses to allow the aromas to unfold. Decanting for 1.5–3 hours is recommended, especially while the wine is still in the first decade of its life, to soften the tannins and reveal its full aromatic complexity.
