Domaine Vincent Dauvissat’s 2021 Chablis is a finely detailed expression of one of Burgundy’s most celebrated white-wine appellations. More refined and layered than Petit Chablis, it combines delicate floral aromas, stony minerality and a distinctly saline finish—hallmarks of the domaine’s understated, terroir-driven style. Tasting Notes
Bright and clear in appearance, this Chablis opens with elegant aromas of pressed white flowers, citrus zest and cool granite. On the palate, it is poised and energetic, with a saline entry, finely tuned acidity and a surprising depth beneath its restrained exterior. The finish is persistent, stony and refreshing, with a subtle mineral character that lingers beautifully.
Already approachable with its vibrant 2021 freshness, the wine should develop added nuance over the next five to eight years, gaining further complexity while retaining its characteristic precision and lift.
Production
Made from Chardonnay grown in the limestone-rich soils surrounding Chablis, the wine reflects the area’s cool climate and mineral-laden Kimmeridgian geology. The 2021 vintage was marked by a challenging growing season, including severe spring frost, resulting in naturally low yields but wines of clarity and energy. Dauvissat’s fruit is traditionally harvested by hand and carefully vinified to preserve purity, with fermentation and maturation carried out using a combination of stainless steel and seasoned oak, followed by time on the lees for added texture and depth.
Food & Serving
Serve lightly chilled at around 10–12°C. This Chablis is an excellent partner for oysters, shellfish, sushi, grilled fish, seafood salads and goat cheese, while its saline character also complements poultry with lemon or light cream sauces. Decanting is not essential, although a brief 15–20 minutes in a carafe can help reveal the wine’s floral and mineral nuances, particularly when enjoyed young.
