Domaine Vincent Dauvissat Chablis 2016 is a classic expression of one of Chablis’s most respected domaines. Made from Chardonnay, it combines bright citrus freshness with a deeper, creamier texture than Petit Chablis, while retaining the precise, mineral character associated with the region. The Dauvissat family has long been regarded as one of the leading names in traditional Chablis.
Tasting Notes
Pale, clear yellow in appearance. The nose is classically Chablis, with inviting aromas of lemon, grapefruit and subtle mineral nuances. On the palate, the wine is deeper, sweeter and more energetic than Petit Chablis, offering generous citrus flavours and an almost opulent texture through the mid-palate. A firm, taut and precise finish brings balance and definition. With its moderate acidity, it is enjoyable in its youth, while also offering medium-term ageing potential.
Production
Produced from Chardonnay grown in the limestone-rich soils of Chablis, a terroir renowned for producing wines with freshness, minerality and precision. The grapes are carefully harvested and vinified with a focus on preserving the purity of the fruit and the site. Traditional maturation contributes additional texture and depth while allowing the wine’s citrus-driven character to remain at the forefront.
Food & Serving
A versatile partner for seafood and shellfish, this Chablis is particularly well suited to oysters, prawns, grilled fish, scallops and mussels. It also pairs beautifully with goat’s cheese, fresh salads and lightly prepared poultry. Serve chilled at approximately 10–12°C. Decanting is not essential, although a short period of aeration can help reveal the wine’s deeper texture and aromatic detail.
Producer
Domaine Vincent Dauvissat is one of the historic and most highly regarded producers in Chablis, with a reputation built on traditional winemaking and an uncompromising focus on terroir. The domaine’s wines are valued for their balance of richness, minerality and long-term ageing ability, and are widely considered benchmarks for classic Chablis from Burgundy.
