Description
Domaine Vincent Dauvissat Chablis 2015 is a precise, mineral-driven expression of one of Burgundy’s most respected white-wine appellations. More concentrated and structured than Petit Chablis, it combines vibrant citrus fruit with the distinctive stony character associated with Chablis. The 2015 vintage offers excellent depth, while the wine’s youthful tension suggests further cellaring will be rewarded.
Tasting Notes
Bright pale yellow in appearance. The nose is focused and restrained, opening with aromas of lemon, fresh mint and a subtle menthol note. On the palate, penetrating flavours of lemon peel are framed by pronounced, flinty minerality and lively acidity. More classic and structured through the mid-palate than the domaine’s Petit Chablis, this is a precise village wine that remains youthful and is not yet fully ready to drink. It should develop greater complexity with additional time in bottle.
Production
Made from Chardonnay grown in the Chablis appellation of northern Burgundy, where cool conditions and mineral-rich soils help preserve freshness and definition. The wine’s taut structure, citrus character and pronounced stony minerality are hallmarks of its origin. Specific harvesting and vinification details for this bottling are not available.
Food & Serving
Serve lightly chilled at approximately 10–12°C, allowing the wine to warm slightly in the glass and reveal its full aromatic detail. It is an excellent match for oysters, shellfish, grilled fish, seafood risotto, fresh goat’s cheese and delicate poultry dishes. Given its youthful structure, a brief decant of 20–30 minutes can help open the wine, although careful aeration in the glass may be preferable for preserving its precision.
Producer
Domaine Vincent Dauvissat is one of Chablis’s benchmark domaines, with a long-standing reputation for producing deeply mineral, age-worthy Chardonnay. The estate is particularly admired for wines that express the character of Chablis with clarity, tension and remarkable precision. Its bottlings are highly regarded by collectors and critics alike, including Stephen Tanzer, who praised this 2015 Chablis for its penetrating citrus fruit and striking mineral energy.
