Description
Domaine Vincent Dauvissat Chablis 2012 is a concentrated and beautifully balanced expression of one of Chablis’s most respected domaines. Rather than offering a light, immediately accessible style, this vintage combines mineral freshness with notable density, texture and depth. It reflects the classical reputation of Dauvissat, a historic producer whose wines are renowned for their ability to mature gracefully.
Tasting Notes
The wine presents a bright, youthful golden hue. Its expressive nose brings together fragrant white flowers, lemon oil and a subtle hint of mint, creating an aromatic profile that is both fresh and deeply layered.
On the palate, the 2012 shows impressive concentration and a distinctive, almost tactile texture, supported by balanced acidity and a lingering mineral character. It is already rewarding to drink, yet its depth and structure give it the potential to develop beautifully over many years with careful cellaring.
Production
Produced in Chablis in northern Burgundy, the wine reflects the region’s cool climate and mineral-rich Kimmeridgian soils, which are central to the identity of classic Chablis. The grapes are harvested with care and vinified to preserve freshness, purity and the natural expression of the site. The result is a wine with both energy and substance, rather than a purely delicate style.
Food & Serving
Serve lightly chilled at around 10–12°C. This full-bodied Chablis is a natural partner for oysters, shellfish, grilled fish, scallops and delicate poultry, while its texture also allows it to accompany richer preparations such as lobster or creamy seafood dishes. Decanting is not essential, but a brief decant of 20–30 minutes can help reveal the wine’s depth when enjoyed young; mature bottles are best opened carefully and served without prolonged aeration.
Producer
Domaine Vincent Dauvissat is one of the benchmark estates of Chablis and has long been associated with wines of exceptional purity, concentration and longevity. Its traditionally minded approach has earned the domaine a particularly strong reputation among Burgundy collectors and critics. The 2012 vintage was praised by Antonio Galloni in June 2014 for its density, balance and expressive character.
