Domaine Vincent Dauvissat’s 2024 Chablis 1er Cru La Forest is a vivid, tightly focused expression of one of Chablis’s premier cru vineyards. Despite the challenges of the vintage, it stands out for its electric acidity, chalky structure and unmistakably saline, classic Chablis character.

Tasting Notes
The nose brings together oyster liquor, lemon zest, iodine, spring flowers and a touch of beeswax. Medium- to full-bodied and energetic on the palate, it is driven by lively acidity and a firm, chalky texture, finishing with impressive precision and a persistent mineral salinity. Its concentration and structure suggest good potential to develop with time in bottle, though no specific drinking window is available.

Food & Serving
A natural match for oysters, shellfish, grilled fish and simply prepared seafood, or goat’s cheese. Serve lightly chilled, around 10–12°C. A young bottle can be opened in advance; a brief spell in a decanter may help it open up, but avoid extended aeration.
