Description

Domaine Vincent Dauvissat’s 2011 Chablis Premier Cru La Forest is a concentrated, precise expression of one of the domaine’s emblematic cuvées. It stood out as a success in a sometimes uneven vintage, combining generous fruit with the lively acidity and chalky finish characteristic of Chablis.

Tasting Notes
The nose opens with lemon oil, oyster shell and dried flowers. On the palate, the wine is medium- to full-bodied and concentrated, with a generous centre, bright acidity and a distinctly chalky finish. The available tasting note does not specify its appearance.

Food & Serving
Serve lightly chilled, around 10–12°C, with oysters, shellfish, grilled fish or simply prepared seafood; its fresh acidity and mineral character also suit goat’s cheese. The January 2018 tasting note found the wine still somewhat closed and not quite ready to drink, so decanting briefly may help it open if it seems restrained. As a mature bottle, its condition will influence how much air it benefits from.
