Domaine Sylvain Dussort’s Chorey-Les-Beaune "Les Beaumonts" 2021 is a beautifully individual Burgundy from a tiny 6-hectare domaine in Meursault, where every cuvée is crafted with remarkable attention to detail. Drawing on vineyards nestled between Savigny-lès-Beaune and Aloxe-Corton, it combines the generosity and depth of its terroir with the elegance and finesse that define the house style.

Tasting Notes
In the glass, it shows the classic appeal of Pinot Noir from this part of the Côte de Beaune: supple, finely textured, and invitingly expressive. The nose is layered with red and dark berries—strawberry, raspberry, blackberry, and boysenberry—lifted by earthy, herbal notes of undergrowth and autumn leaves. On the palate, the wine is rich and full-flavoured, yet balanced by fine-grained tannins and a graceful structure. It has both charm and substance, with enough depth to develop positively over the next 8 years or so.

Production
The Chorey-lès-Beaune vineyards sit in a privileged position between two more famous neighbours, benefiting from a terroir known for giving Pinot Noir both body and bouquet. Sylvain Dussort’s approach is meticulous and hands-on, reflecting the small scale of the domaine and its focus on precision. The wine is matured in oak barrels for 12–14 months, then rested in tank for a further 3 months before bottling.

Food & Serving
This is a versatile Burgundy that works especially well with roast chicken, duck, game birds, mushroom dishes, and earthy vegetarian plates. Serve slightly cool, ideally around 15–17°C, and consider decanting for 30–45 minutes if drinking young to help the aromatics open up.
