The nose opens gradually, unfurling layers of ripe plum and wild berry compote, followed by nuances of smoked duck, warm baking spices, and a touch of vanilla pod from its élevage in fine oak. Subtle floral notes and a hint of undergrowth add complexity as the wine takes on air. On the palate, this is full-bodied, broad-shouldered and muscular for Romanée-Saint-Vivant, with a dense, fleshy core of dark red and black fruit wrapped in powdery, finely grained tannins. At Domaine Sylvain Cathiard, work in the vineyard is meticulous, with low yields and careful hand-harvesting at optimal ripeness to preserve purity of fruit and natural balance. In the cellar, the grapes are sorted rigorously, then vinified with a gentle extraction to capture both depth and elegance, followed by élevage in high-quality French oak barrels—often with a significant proportion of new oak—over two winters, allowing the wine’s complex aromatics and finely woven tannins to harmonise before release.

This Grand Cru deserves equally refined cuisine: think roast duck or pigeon, venison with a cherry or berry reduction, veal sweetbreads, or truffled poultry and wild mushroom dishes.
