Tasting Notes
In the glass, this wine shows a deep, vibrant ruby color with a youthful sheen at the rim. The nose is expressive and layered, opening with ripe cherries, wild berries and plums, then unfolding into notes of peony, crushed violets, subtle wood smoke and a hint of spice. On the palate, it is medium to full-bodied with a generous, fleshy core of dark red and blue fruits. The texture is ample and velvety, supported by fine but firm tannins that give the wine its characteristic Nuits-Saint-Georges backbone. Aux Thorey is a premier cru vineyard on the northern side of Nuits-Saint-Georges, on the Vosne-Romanée side of the village, where lighter, limestone-rich soils and good drainage favor wines of both power and finesse. Domaine Sylvain Cathiard typically works with low yields and careful vineyard husbandry, including manual work in the vines and hand-harvesting at optimal ripeness to preserve purity and balance. In the cellar, the fruit is sorted meticulously, then vinified with gentle extraction to capture depth without harshness, followed by élevage in high-quality French oak barrels, a proportion of which are new. The result is a Pinot Noir that faithfully reflects its premier cru terroir while bearing the unmistakable signature of Cathiard’s precise, artisanal winemaking.
