Crafted from Chardonnay grown in the estate’s high-altitude vineyards between Saint-Aubin and Chassagne-Montrachet, it offers the kind of precision, freshness and finesse that make Crémant de Bourgogne such a respected style. With its low dosage and lively character, it’s an elegant alternative to Champagne with a distinctly Burgundian signature.

Tasting Notes
In the glass, it shows a bright, pale golden colour with a fine, persistent mousse. The nose is fresh and inviting, with notes of white peach, ripe citrus and subtle toasted brioche. On the palate, the wine is lively and focused, balancing crunchy acidity with a lightly creamy texture. Flavours of citrus fruit and stone fruit are carried through to a clean, delicate finish with a mouthwatering, mineral-driven freshness. It is best enjoyed young for its vibrant energy, though it can develop added nuance over the next 2-3 years.

Production
Domaine Roux sources fruit from high-lying vineyards between Saint-Aubin and Chassagne-Montrachet, where cooler conditions help preserve the acidity and brightness essential for quality sparkling wine. Chardonnay is harvested with care to retain freshness, and the wine is vinified according to the traditional method, with restrained dosage to keep the final style extra dry, precise and pure.

Food & Serving
This is an excellent aperitif wine, perfect for opening a special evening in style. It also pairs beautifully with fresh seafood, especially shellfish, oysters, prawns or delicately prepared fish dishes. Serve well chilled, ideally at 6-8°C, and decanting is not recommended.
