In the glass, the 2008 Hautes Côtes de Nuits Chardonnay shows a pale straw to light golden hue with delicate green reflections, hinting at both youthfulness and tension. In the cellar, the must is gently pressed and fermented in oak barrels using indigenous yeasts, with élevage in carefully selected French oak (often with a modest proportion of new wood) to add texture and complexity without dominating the terroir-driven profile.
