Domaine Rieffel’s Crémant Rosé Mr. Pink Bio 2023 is a characterful, dry-style sparkling wine that shows how precise biodynamic farming and traditional méthode traditionnelle can deliver both energy and charm. Made entirely from Pinot Noir and bottled without dosage, it combines natural wine authenticity with a remarkably polished, inviting style. The result is a distinctive Crémant d’Alsace that feels as artisanal as it is approachable.

Tasting Notes
In the glass, it shows a delicate salmon-pink hue with a fine, persistent mousse. The nose is expressive and vibrant, with aromas of wild strawberries, red currant, raspberry, and subtle floral notes, followed by a faint brioche and yeasty complexity from time on the lees. The palate is lively and refreshingly dry, with bright red berry fruit, crisp acidity, and a precise mineral backbone. Despite its natural-wine credentials, it remains beautifully balanced and harmonious, finishing clean and long with a touch of saline freshness. It has excellent immediate appeal, though its structure and lees complexity suggest it can also age gracefully for a few years.

Production
This Crémant comes from 100% biodynamically grown Pinot Noir in Alsace and is made as a rosé de saignée, giving it both color and concentration. The base wine was spontaneously fermented and matured for ten months on the lees without bâtonnage, then underwent a second fermentation in bottle followed by 17 more months on the lees. It was disgorged without dosage and kept entirely free of added sulfur until disgorgement, with only minimal sulfur added thereafter, resulting in a wine of purity, tension, and careful craftsmanship.

Food & Serving
Serve well chilled at 6–8°C, ideally in a tulip-shaped sparkling glass to highlight the aromatics and texture. It pairs naturally with charcuterie, smoked salmon, tempura, roast poultry, grilled prawns, or fresh goat cheese, and also works wonderfully as an aperitif. Decanting is not necessary; simply open and enjoy while the mousse is lively and the fruit is at its brightest.
