Crafted from Auxerrois, Pinot Gris, and Riesling, it combines freshness, depth, and precision, with a style shaped by biodynamic farming and long bottle aging.

Tasting Notes
Pale to golden yellow in the glass, it shows a fine, persistent mousse and an elegant, luminous appearance. The nose opens with ripe orchard fruit, citrus zest, white flowers, subtle brioche, and a delicate mineral edge, while the palate is crisp and layered, balancing tension, savory complexity, and a dry, focused finish. Thanks to its extended lees time and restrained Extra Brut style, the wine feels both vibrant and textural, with the kind of quiet complexity that makes it highly versatile at the table. It has the structure and freshness to develop beautifully over the next few years, gaining even more depth and nuance with time.

Production
The grapes come in part from Domaine Rieffel’s top vineyards around Mittelbergheim in Alsace, where biodynamic cultivation supports healthy vines and expressive fruit. The wine is spontaneously fermented, with the base wines spending nine months in used barrique barrels before the second fermentation in bottle, followed by 24 to 36 months of lees aging.

Food & Serving
This Crémant is excellent as an aperitif and pairs naturally with oysters, shellfish, sushi, roast chicken, goat cheese, and light vegetable dishes. Serve well chilled at 6–8°C, and decanting is not necessary.
