Description

Domaine Ratte’s 2023 Les Corvées comes from a prized Arbois hillside and is made from Trousseau à la Dame, a rare, low-yielding expression of Jura’s traditional Trousseau grape. The cuvée takes its name from Les Corvées—“forced labour”—and showcases the character of a historic variety that is now seldom planted.

Tasting Notes
The wine is expected to show a lively ruby hue, with expressive aromas of red berries and a gently spicy, savoury edge. On the palate, Trousseau’s freshness and concentrated fruit meet a defined tannin structure, rounded by the maturation of part of the wine in new oak. Enjoy it while its fruit is vibrant, or hold it for a few years to allow the tannins and oak to settle further. The producer’s specific ageing guidance is not available.

Production
The Les Corvées parcel lies at around 350 metres above sea level in Arbois, where the Ratte family planted the old, rarely encountered Trousseau à la Dame. Its naturally low yields were chosen to concentrate the character of the site in fewer, more aromatic grapes. The fruit was carefully hand-harvested and fermented spontaneously, beginning with carbonic maceration in intact berries before fermentation was completed after gentle pressing. Part of the wine matured in new oak to soften and round its tannins. The wine is described as organic.

Food & Serving
Pair with roast poultry, grilled pork, charcuterie or earthy mushroom dishes, whose savoury flavours complement Trousseau’s fruit and spice. Serve slightly cool, around 14–16°C. A brief airing in the glass should be enough; if opening it young, a short decant can help the wine open up.
