Crafted from Pinot Noir and shaped by Alexandre Parigot’s assured hand, it combines fine detail, site character, and a level of quality that remains impressively accessible for the appellation.
Tasting Notes
In the glass, it shows a beautiful ruby-red colour that immediately signals freshness and finesse. The nose opens with red cherries, plums, and raspberries, layered with forest floor, red liquorice, crushed stone, and a touch of vanilla.
On the palate, the wine is vibrant and finely textured, with flavours of red cherry, redcurrant, and cranberry joined by subtle smoky and vanilla notes from oak maturation. It has the structure and balance to age gracefully, and should become even more expressive over the coming years.
Production
This wine comes from Parigot’s parcel in Les Grèves, a well-situated Premier Cru vineyard in the Côte de Beaune, where Pinot Noir benefits from Burgundy’s classic limestone-and-clay terroir. Most of the fruit is destemmed before pressing and fermentation, helping preserve purity while keeping the style polished and precise. The wine is matured for 18 months in total, spending the first period in a mix of new and used French oak barrels, followed by 6 months in stainless steel before bottling.
Food & Serving
This is a versatile Burgundy that pairs beautifully with roast chicken, duck breast, veal, mushroom dishes, and fine poultry preparations with a light sauce. Serve at around 16–18°C, and consider decanting for 30–60 minutes if opening it young to allow the aromas to fully unfold.
