Domaine Moreau-Naudet’s Chablis 1er Cru Forêts 2023 in magnum format is a striking expression of classic, mineral-driven Chablis. Tasting Notes
In the glass, the 2023 Forêts Premier Cru shows a pale lemon color with green highlights, hinting at its youthful energy and vibrant acidity. The nose is deep and refined, opening with notes of beeswax, orange zest and ripe pear, layered over the classic Chablis signatures of oyster shell, wet stone and a faint saline breeze.
On the palate, it is medium to full-bodied with an impressive sense of drive and tension. A lively, mouthwatering acidity carries flavors of citrus, crunchy orchard fruit and subtle stone fruit, wrapped in a fine, creamy texture from its time in neutral oak. The finish is long, clean and distinctly chalky, leaving a precise, saline impression that invites another sip. Production
The Forêts climat is a Premier Cru site on the left bank of the Serein River, essentially a sub-section of the famed Montmains, rooted in classic Kimmeridgian limestone rich in fossilized seashells—one of the key signatures of true Chablis terroir. The vines draw their character from these stony, well-drained soils and the cool continental climate, which together preserve acidity and aromatic finesse. Grapes are typically harvested by hand to ensure careful selection in the vineyard, then gently pressed to protect purity and freshness. Fermentation takes place with indigenous yeasts in a combination of used oak barrels (around 30%) and stainless steel, allowing a subtle textural roundness without overt oak influence. Aging on fine lees adds extra depth and complexity while still showcasing the wine’s linear mineral profile.

This Chablis 1er Cru Forêts is a natural partner for seafood: think oysters, scallops, turbot, langoustines or simply grilled fish with lemon and herbs. It also works beautifully with sushi and sashimi, fresh goat’s cheese, lightly creamy seafood pastas and dishes featuring fennel or green asparagus. Serve at 10–12°C (50–54°F) to highlight its precision and aromatic detail. In its youth, a light decant of 20–30 minutes can help the wine open up, especially from magnum; as it gains a few years of bottle age, simply pouring into large white wine glasses will be enough to let its complexity shine.
