Grapes are usually harvested by hand to ensure careful selection in the vineyard, with any imperfect bunches discarded. In the cellar, gentle destemming and temperature-controlled fermentation help preserve the purity of fruit, while a traditional Burgundian vinification—maceration on the skins and aging in oak barrels, a portion of which may be new—adds texture and subtle spice without overwhelming the wine’s delicate character.
