This cuvée shows Ribolla at its most precise and textural, balancing vibrant freshness with a quietly complex, mineral-driven profile. Sourced from select hillside parcels in Brda, it captures the energy of the vintage while remaining true to the estate’s elegant, terroir-focused style.

Tasting Notes
In the glass, the wine shows a luminous straw to pale gold hue with subtle green reflections, hinting at its youthful vibrancy. The nose opens with delicate notes of citrus zest, green apple and white peach, layered with wild herbs, acacia blossom and a chalky, stony minerality. As it breathes, more subtle nuances appear: hints of almond, fresh bread crust and a gentle saline lift. On the palate, this Ribolla is focused and linear at first, driven by crisp acidity and a fine, almost saline edge. Flavours of lemon peel, crunchy pear and stone fruit are interwoven with wet stone, bitter almond and a light herbal note that adds complexity without heaviness. The texture is signature Simčič: sleek yet quietly structured, with a very long, clean, mineral finish. While already highly enjoyable in its youth, the wine has the balance and acidity to evolve gracefully over the next 4–7 years, developing more honeyed and nutty complexity with time in bottle.

Production
The grapes for Ribolla Cru Selection are sourced from carefully chosen hillside vineyards in the Brda region, where marl and sandstone soils (locally called ‘opoka’) give naturally low yields and pronounced minerality. The vines benefit from a unique cross-influence of Alpine freshness and warm Adriatic breezes, helping to preserve acidity while achieving full flavour ripeness. Harvesting is done by hand, typically in small crates to protect the fruit, with rigorous selection both in the vineyard and at the winery. Fermentation takes place with indigenous yeasts, often in a mix of stainless steel and larger neutral oak or concrete, allowing the grape and terroir to speak rather than new wood. The wine rests on its fine lees for added texture and complexity, with minimal intervention and restrained use of sulphur to preserve purity and finesse.

Food & Serving
This Ribolla is a superb partner for refined, subtly flavoured dishes. Think crudo or carpaccio of white fish, ceviche, grilled sea bass, shellfish, oysters, sushi, or simply prepared prawns. It also pairs beautifully with vegetable dishes—spring asparagus, artichokes, fennel salad—as well as soft cheeses, young goat’s cheese, and delicate poultry or risotto with herbs and lemon. Serve at 10–12°C to highlight its freshness and mineral backbone. A brief decanting of 15–20 minutes can help the aromas unfurl, especially in the first couple of years after bottling.
