Tasting Notes
Deeply colored for Burgundy, this wine typically shows a dark ruby core with graceful evolution toward garnet at the rim. The bouquet is intensely layered, with black cherry, rose petal, black tea, warm spices, and savory notes of roasted meat and mineral earth.
On the palate it is both powerful and polished, with dense fruit, finely integrated oak, and remarkable lift. There is a tart, juicy core that keeps the wine fresh and focused, while the finish is long, mineral-driven, and strikingly persistent. This is a wine with superb aging potential and can continue to evolve beautifully for many years, gaining further complexity and nuance.
Production
Chambertin Clos de Bèze is one of the crown jewels of Gevrey-Chambertin, where limestone-rich soils and an exceptional terroir produce Pinot Noir of great depth, perfume, and structure. Lucien le Moine sources top-tier grapes and vinifies them in Beaune with a highly hands-on approach, working with small lots from selected growers and focusing on meticulous élevage. The wine is aged on its lees in new classic Burgundian oak barrels, bottled by hand directly from barrel, and is typically neither fined nor filtered, preserving texture and terroir expression.
Food & Serving
This Grand Cru pairs beautifully with dishes that can match its depth and savory character, such as roast duck, venison, pigeon, beef tenderloin, or game birds with earthy sauces. Mushroom risotto, truffle dishes, and rich braised meats are also excellent companions. Serve at around 16–18°C, and decant gently for one to two hours if the bottle is opened young or has been resting for a long time.

Lucien le Moine was founded in 1999 by Rotem and Mounir Saouma and has become one of the most talked-about names in Burgundy. The estate is known for an exacting philosophy, tiny production, and sourcing only premier and grand cru parcels from selected growers, followed by highly distinctive cellar work in Beaune. The producer has earned a strong reputation among collectors and critics for wines that are both expressive and age-worthy, and for bringing remarkable precision and individuality to Burgundy’s great terroirs.
