Tasting Notes
In the glass, this Champagne shows a pale, luminous straw colour with subtle green highlights and a fine, persistent mousse. The nose opens with lifted aromas of lemon zest, green apple and white flowers, layered with chalky minerality, fresh brioche and a delicate hint of almond.
On the palate, it is taut and vibrant, with a racy citrus core wrapped in notes of pear, crunchy stone fruit and a touch of salinity. Hailing from Grand Cru vineyards in Chouilly on the Côte des Blancs, this Champagne is rooted in chalk-rich soils that are famed for producing exceptionally pure, mineral whites. The fruit is typically harvested by hand to ensure optimal selection of bunches and to preserve delicate aromatics. In the cellar, gentle pressing of the grapes yields the finest juice, which is fermented in temperature-controlled vessels to safeguard freshness and precision. A portion may be aged on lees prior to blending to add texture and complexity, before the wine undergoes its secondary fermentation in bottle and extended lees aging, enhancing its fine bead and subtle autolytic notes. The low dosage in the Extra Brut style allows the Grand Cru terroir of Chouilly to shine through with clarity.

This Extra Brut Grand Cru Champagne is a natural partner for refined, delicately flavoured dishes. Try it with oysters, scallop carpaccio, sushi and sashimi, or classic Champagne pairings such as caviar, blinis and fresh goat’s cheese. It also works beautifully with lightly grilled fish, lobster, or simple roast chicken with herbs. Serve well chilled at 8–10°C (46–50°F) to showcase its tension and aromatic finesse.
