Grapes are typically hand-harvested at optimal ripeness to preserve freshness and ensure careful sorting in the vineyard. After gentle pressing, the base wines are fermented in temperature-controlled stainless-steel tanks (and, depending on the cuvée, a small proportion may see older oak) to retain purity of fruit. The traditional méthode champenoise (traditional method) is used, with secondary fermentation in bottle and extended aging on lees to build texture, fine bubbles, and complexity before disgorgement and dosage.
