Tasting Notes
In the glass, the 2021 Clavoillon shows a pale lemon-gold hue with youthful brightness and a subtle green rim, signalling its freshness and energy. The nose is refined and quietly complex, with notes of dewy green apple, lime zest and freshly cut pear, layered over hints of wet stone, chalk, and petrichor. With air, discreet floral tones—white blossom and acacia—emerge alongside a whisper of almond and delicate brioche. On the palate, this is sleek and poised rather than opulent, with a piercing, linear acidity that drives the wine from the attack through to a long, sapid finish. Citrus and green apple fruit are wrapped around a mineral core, giving a mouthwatering, saline edge. The texture is fine and silky, with just enough mid-palate weight to balance the racy structure, and the finish lingers with juicy, citrus-inflected persistence. While already impressive in its youth, this 2021 has the structure to develop gracefully over 8–12 years, gaining greater aromatic complexity, creamier texture, and more pronounced hazelnut and honeyed nuances with time in bottle.

Production
Clavoillon is one of Domaine Leflaive’s historic premier cru holdings in Puligny-Montrachet, lying on well-drained, limestone-rich soils with a mix of clay and fine stones that give both tension and volume to the wine. The domaine has been a pioneer of biodynamic viticulture in Burgundy, and the vines here are meticulously cultivated, with low yields and hand harvesting to ensure only perfectly ripe, healthy Chardonnay clusters are brought to the cellar. The grapes are gently pressed, and the must is fermented with indigenous yeasts in French oak barrels (a proportion new, carefully judged to avoid overwhelming the terroir). The wine then matures on its fine lees, with bâtonnage used sparingly, allowing the natural texture and complexity to build while preserving the incisive purity and mineral precision that define Puligny and the 2021 vintage.
