Grapes are typically harvested by hand at Domaine Launay-Horiot, allowing strict selection of only healthy, optimally ripe clusters. In the cellar, the fruit is gently handled—often with a proportion of whole berries—to retain delicacy and perfume, followed by a traditional fermentation in vat.
