Domaine Jean-Philippe Fichet’s Monthelie Blanc Sous Le Cellier 2022 is a beautifully poised single-vineyard Chardonnay from one of the Côte de Beaune’s most exciting white-wine pockets. Sitting just beside Meursault, it captures that same sense of depth and refinement, while adding Monthelie’s own cool elegance, tension, and mineral drive.

Tasting Notes
In the glass, it shows a bright, polished profile with the kind of clarity and finesse that immediately signals serious Burgundy. The nose unfolds with fresh mirabelle plums, citrus peel, and crushed limestone, lifted by discreet hints of smoke, vanilla, and butter. The palate is layered yet restrained, with a subtle richness wrapped in mouthwatering freshness and a clear mineral core. Notes of ripe stone fruit, wet stones, white flowers, fresh quince, toasted nuts, and a touch of newly struck match give the wine impressive complexity. Elegant, concentrated, and energetic, it already drinks beautifully, but it should also gain extra nuance over the next several years.

Production
‘Sous le Cellier’ is a steep, southwest-facing parcel in Monthelie, a small appellation between Volnay and Meursault known primarily for red wines, with only limited Chardonnay plantings. The exposure helps the grapes reach full ripeness, while the hillside terroir contributes freshness and limestone-inflected minerality. The fruit is hand-harvested and rigorously sorted in the vineyard, then whole-cluster pressed in a pneumatic press. Fermentation and malolactic conversion take place in oak barrels, followed by aging on the lees with little to very gentle bâtonnage. The wine spends around 12 months in a mix of small and larger barrels, with no more than 30% new oak, before a further 6 months of settling prior to bottling.

Food & Serving
This is an excellent match for refined dishes such as roast chicken with herbs, veal, lobster, scallops, turbot, or creamy mushroom risotto. It also works beautifully with mature hard cheeses and classic Burgundy-style poultry dishes. Serve at around 10–12°C, and while decanting is not essential, a short aeration can help open the wine when it is young.
