Description
Domaine Jean-Philippe Fichet’s Bourgogne Blanc Côte d’Or Vieilles Vignes is a remarkably polished Chardonnay that performs far above its appellation. Sourced from old vines in prime Meursault sites, including one parcel bordering the 1er Cru Les Charmes, it captures the depth, finesse, and unmistakable class of great white Burgundy.
Tasting Notes
The wine shows a luminous, refined character with plenty of concentration and energy. Aromas of ripe peach, pear, acacia blossom, honey, crushed stone, lemon curd, butter, and a hint of light caramel unfold beautifully in the glass.
On the palate, it is layered and vibrant, combining juicy stone fruit, yellow apple, citrus peel, and almond with subtle smoky and buttery tones. The texture is generous yet precise, supported by keen acidity and impressive fruit intensity. It has the structure and balance to age gracefully over the coming years, gaining even more complexity with time.
Production
The grapes come from two plots in southern Meursault, Les Millerands and Les Pellands, with the latter directly bordering the 1er Cru Les Charmes. The vines are up to 75 years old and rooted in clay-limestone soils, contributing depth and minerality to the wine. Harvesting is done by hand with strict selection in the vineyard, followed by gentle whole-bunch pressing in a pneumatic press. Fermentation and malolactic conversion take place in large oak casks, and the wine is aged on lees with little to no bâtonnage before spending around 12 months in 500–600 liter barrels and a further 6 months in stainless steel to preserve freshness and terroir expression.
Food & Serving
This is a natural match for roasted chicken, veal, lobster, scallops, creamy pasta dishes, and fine white fish with butter or herb sauces. Serve it at around 10–12°C, and consider a short decant if you want to open up the aromatics, especially in its youth.
