Domaine G. Roumier’s Bonnes-Mares 2007 is a beautifully poised Grand Cru from one of Burgundy’s most respected addresses. Sourced from historic parcels on the border of Chambolle-Musigny and Morey-Saint-Denis, it combines Bonnes-Mares’ natural depth with Roumier’s hallmark finesse and precision. The 2007 vintage brings a more elegant, aromatic expression, shaped by careful timing in a challenging year.

Tasting Notes
In the glass, this 2007 shows a graceful, mature ruby-red tone. The bouquet opens with red cherry, raspberry, violet, and a subtle mineral spice, gradually giving way to more developed notes of forest floor and dried flowers. The palate is all about balance and detail rather than sheer power. Fresh acidity keeps the wine lively, while fine tannins and an airy structure frame the fruit beautifully. It is already drinking with harmony and clarity, and while it may hold for a few more years, its peak is clearly in its mature, nuanced phase.

Production
The wine comes from Domaine G. Roumier’s historic Bonnes-Mares parcels, where the soils shift between pale limestone and darker, iron-rich clay along the Chambolle-Musigny and Morey-Saint-Denis border. The fruit was hand-harvested, with partial destemming to preserve both purity and texture, then aged traditionally in oak barrels for around 16 months. This approach highlights the site’s character while maintaining the vineyard’s natural elegance.

Food & Serving
This is an excellent match for refined dishes such as roast duck, pigeon, game birds, veal, or mushroom-based cuisine. It also works well with aged cheeses and lighter preparations of lamb. Serve at around 16–18°C, and consider decanting for 30–60 minutes if serving now, especially to let the mature aromatics fully open.
